There’s more than one way to get delicious coconut butter. If you own a Vitamix or other high speed blender, you can make your own organic coconut butter by blending up a bag of shredded or dessicated organic coconut. If you don’t own a high speed blender, you can buy a jar of the delicious Loving Earth Coconut Butter*. Regardless of which option you choose, in warmer weather, it’s going end up with a fairly decent layer of liquid or solid oil on the top of the jar. Since we’ve had a couple of customers ask us about this, we thought we’d dedicated a blog post to coconut butter.
Does this mean it has separated? Yes. Does it mean there’s something wrong with it? Absolutely not.
Made properly, it’s just one ingredient – coconut flesh blended or ground until smooth. The simplest way to make it yourself is to tip a bag of shredded or dessicated coconut in to your blender and blend until you end up with a smooth-ish runny liquid. I say ISH is because there will be a little bit of gritty texture left behind, which feels divine on the roof of your mouth as you devour it (see above, it’s a perfect topping for fresh figs).
Since we just have coconut flesh in the butter, and there is coconut oil in this flesh, the coconut butter is going to change consistency depending on the weather and the temperature of where you store it. Around 25°C, the consistency of the oil changes from a solid to a liquid. If stored around or above 25°C, the coconut oil is going to slowly rise to the top of the jar of coconut butter. When it cools, it’s still going to stay on the top of the jar as a solid layer.
As you can see by the photo above, the dollop on the left is firm. This was taken from a handmade jar of coconut butter made by blending a bag of dessicated coconut and stirring through some Vanilla Bean Powder. This was scooped from the top of the jar and had already successfully been re-combined and left to settle back down. The dollop on the right came from a jar of Loving Earth Coconut Butter where the coconut oil had been allowed to rise to the top and it has not yet been re-combined.
Which method you choose will depend on how firm the coconut butter is & how much you want to mix. Option 2 is usually sufficient.
