Purple Coconut Smoothie

Here’s a super quick smoothie to make in your Vitamix or any good quality blender. It has 3 ingredients and blends in 10 seconds. It takes longer to chop the apple than anything else.


  • 1 x apple cut in to 1/4 or 1/8 pieces (I removed the core, but you don’t have to)
  • 1 punnet of blueberries
  • 1 x 330ml bottle of Chi coconut water


Place ingredients in to blender & blend on high for 10 seconds. If you’re using the Vitamix Blender, start on the variable speed, wind it up to 10 and then flip the switch to high.

This made 750ml of purple, frothy antioxidant filled delight. This smoothie is also high in potassium from the coconut water. At these quantities, the flavours are quite balanced. You can taste the coconut water, but it’s not overbearing. If you like cooking with coconut oil, you’ll love the hint of coconut in the flavour. If you don’t, substitute some filtered water instead.
