Paleo Anzacs from The Healthy Chef

I have a handful of favourite healthy chefs, and ‘The Healthy Chef’, Teresa Cutter is right up at the top of the list. Her recipes are easy to cook, full of flavour and good for you, and the best bit, when Teresa posts the recipes, she actually tells you why.

I have been trying, for months now, without much luck, to make a healthier Anzac Cookie. Teresa has two recipes and today I had a bit of a play and did some ingredient swapping to make do with what was in my pantry. I’m not going to reproduce the recipes in full here, but you can find them on the links below:-

I started off with the Paleo recipe and tweaked by necessity. Below is the list of ingredients on the recipe (left) and what I used (right)

  • Almond Meal > that’s what I used, I had it in the pantry
  • Flaked Almonds > I thought I had some, but they were bendy. I used rolled oats (I’m wheat free but not gluten free)
  • Desiccated Coconut > I used shredded and if you read below, there’s an adjustment to be made here*
  • Honey > I had this and used the Spiral Foods raw honey
  • Macadamia Nut Oil > I swapped this for coconut oil. I used Coconut Magic, but the Loving Earth has a really clean taste too. If you choose something cheap here, you’re cookies will taste smokey. Don’t cheap out on the coconut oil you only need 1/4 cup to make 22 cookies.
  • Bi-carb Soda > I had some, but don’t use stuff with preservatives from the supermarket. I used the Bobs Red Mill and we’ll be adding the brand to the organic food section of the store in 2013.

* swapping desiccated for shredded makes the balls harder to roll and I had to add extra almond meal and water to get them to roll.
