Naked Chocolate Cake

Today was an experiment – to get my husband to eat a healthy piece of chocolate cake. Mission Impossible? I thought so. I started off with the Teresa Cutter Naked Chocolate Cake recipe, which I will not replicate here, because it’s not my recipe, but you can see it on Teresa’s website here. I had to make a couple of small adjustments to the recipe. Why? Because I decided to make a chocolate cake without cacao powder in the house. I should have taken a walk through the Loving Earth aisle of the shop first. Idiot!

Here’s what I substituted / omitted (which is why my cake looks pale):-

  • Instead of cocoa or cacao, I used 1/2 Loving Earth Drinking Chocolate and 1/2 Loving Earth Cacao nibs
  • I left the cinnamon out, not a huge fan and I didn’t have any. I may try it next time to see if I like it.
  • I used the Loving Earth Vanilla Bean Powder instaed of extract or paste.
  • I chose the coconut oil as I didn’t have macadamia oil and wanted to make it dairy free.

I followed the recipe, popped it all in the Vitamix and it was still quite runny for me, so put some more coconut flour in and kept adding / blending until I got the consisitency right. I think I went a little too far, but I  wasn’t sure, baking with coconut flour is such an interesting thing, it absorbs liquids so much faster than wheat flour and the change happens quickly. I baked them anyway.

After taste testing, I made the following mistakes that I’m going to fix next baking session.

1) these really weren’t chocolatey enough, and that’s my fault. The drinking chocolate/cacao nibs wasn’t an even swap. The colour of my cupcakes was quite pale compared to Teresa Cutter’s final picture.

2) the mixture needs to be a little runnier than I had it,  again, my fault for adding in extra coconut flour. It may have needed a little more, but I put in too much.

My own little twist, I’m going to add in some flavoured liquid stevia. Sweet Leaf so some great flavours, the Choc Raspberry is coming to mine or the English Toffee to start off with.

Lesson learned, organic food can be healthy & tasty. Ask my freddo frog loving husband!
