Loving Earth Raw Chocolate Energy Bars

It’s the weekend, you want to eat something naughty but you know you need to eat well, so you trick your tastebuds in to thinking you’re feeing it junk. Here’s the perfect recipe to do it!! (click here for the original recipe that I got my inspiration from on the Loving Earth website)

Base Ingredients

  • 1 cup almonds (activated if you have them)
  • 8 pitted Medjool dates (good supermarkets and fruit & veg stores will have these)

Blend these base ingredients in your Vitamix (or other blender) until finely chopped

Superfood it up!

Spike it with fruit & nuts

There’s no right or wrong here. The original recipe called for a handful of goji berries and a handful of raisins and a handful of pumpkin seeds. You can really do whatever you want. Blend them in your Vitamix and have a smooth mixture, or for something with some crunch, grab your additional berries and nuts and chop them  by hand and fold them through the mixture after you’ve done your blending.

What else could you use? Puffed amaranth, puffed quinoa, buckinis, shredded coconut, sunflower seeds, the choices really are endless.

What did I do wrong the first time I made it?

  • Here’s a really great tip when using your Vitamix blender, when it’s working hard, don’t keep it on a low speed. If you do, you’ll trip the safety switch. Simply take the jug off, flip the base over and hit the reset switch underneath and you’re good to go again. Most customers who buy a Vitamix off us contact me once to tell me their blender stopped working and can they get it fixed under warranty. If it’s happened to you, you’re absolutely in the MAJORITY, so don’t worry :)
  • I didn’t have any dates. When I checked the used by date, they were about 3 months past, so instead, I threw in some organic date logs rolled in almonds. Oops. I don’t think it would have made any difference.
  • I was really slap happy for the measuring, which is usually fine, except my ‘not enough dates’ has left some coconut oil running out of the mixture at the end. (see the image below).

Here’s my first crack at it. Yes, it looks like a giant chocolate cow pat. I’m ok with that ’cause I got to taste it and it’s friggin’ amazing!

When it comes out of the Vitamix, it’s warm. And yes, like a cake or cookies that just come out of the oven, they taste like pudding, and I ate a giant piece before spreading it out on a piece of If You Care parchment paper and putting it in the fridge, which gave me just enough time to write this blog post and put the kettle on and settle in front of the telly for 30 minutes with a giant chunk of this and a cup of organic tea. Not a bad Saturday afternoon :)
