Chocolate Superfood Cake

There’s so much more to a healthy diet than drinking green smoothies. Feeding the soul, the social interaction and the love that surrounds food is also a really important part of the rituals that people have around food in their lives. With this in mind, when it’s time to indulge, for those that want to ‘have their cake and eat it too’, it’s possible with this superfood infused chocolate cake. It’s 100% grain free, gluten free, dairy free, refined sugar free and soy free. The cake is nut free, and you can simply choose a nut free icing if you want to send it to school with the kids iced.

Ingredients
Cake
Frosting
  • 50g (1/2 block) Loving Earth raw chocolate
  • 40gm cacao butter
  • 2 tbsp maple syrup
  • 1 tbsp cacao powder
  • Pinch salt
  • 1 cup soaked cashews (soak for at least 3 hours, drain and rinse well)
Instructions
Cake
  1. On stove top melt chocolate and coconut oil over low heat – do not allow to boil. Let cool.
  2. Beat eggs in mixing bowl in either handheld or stand mixer for 1 minute
  3. Add cooled chocolate/coconut oil mixture and honey and beat until well combined
  4. Combine all dry ingredients in a large bowl and mix to combine.
  5. Add dry ingredients to wet ingredients, small amounts at a time, scraping the down the sides.
  6. Mix until well combined.
  7. Pour mixture into prepared pan and place in 160 oven and cook for 1 hour.
  8. A 20cm round tin will be perfect.
  9. Once cooked. Allow to cool. At this point it is nut free and can be taken to school.
Frosting
  1. Melt chocolate and cacao butter over low heat on stove top
  2. Put cashews into Vitamix or powerful blender and blend for about 15 seconds
  3. Add maple syrup, cacao, salt and chocolate mixture and blend til cashews have ‘dissolved’ and mixture looks like frosting.
  4. If not all eaten at once, cake is best kept in freezer as it will dry out very quickly due to coconut flour content.
