Banana Ice Cream – with one ingredient

While watching the final masterclass on Masterchef last night, Matt Preston came on and made an entree, main and dessert using very basic pantry items. While I don’t think much of the baked bean soup and cola baked chicken wings from a health perspective, the dessert was brilliant and simple, and I just HAVE to try it out myself.

RECIPE / METHOD

  1. Take 4 over ripe bananas and freeze them (in their skin)
  2. Remove frozen bananas from the freezer, peel, roughly chop and put in to the bowl of your stick blender (do this quickly as they melt quickly)
  3. Blend in a Vitamix or high speed blender until smooth and creamy
  4. Serve immediately
  5. -or- for a firmer mix, put it back in the freezer blended to firm up a little before serving.

VARIATIONS

  • Add a dollop or organic nut butter to the mixture (almond, peanut, ABC, whatever you like)
  • Add a dollop of coconut oil to the mixture, and/or shredded organic coconut
  • Add some finely grated organic chocolate to the mixture or simply sprinkle over the top (or even better, with a vege peeler, put organic chocolate curls on top)
  • Add Chia Seeds to the mixture
  • Add a sprinkle of cinnamon to the mixture
