Ice Cream or Mousse – just add cold!

Tonight I was in a mood. I just wanted something fresh for dessert and there wasn’t a lot in the house that didn’t involve chocolate. Even organic chocolate is on my no list this week, all things cacao-ish are a sometimes food for me. So, what did I have to play with? 6 ripe bananas and a punnet of blueberries in the fridge, all of which were at the point where if I didn’t use them, I’d have to throw them away. I made dessert in 2 minutes with them. IT took me longer to fill the containers than to make the blend.

Here’s all I did. 6 bananas, peeled, and a punnet of blueberries in to my Vitamix. Start off on the slow speed for about 10 seconds then put it up to full speed. Blend for about 15 seconds. Voila. Purple fluffy sludge. If you wanted to make it chocolate as well, throw in a heaped teaspoon of cacao powder, or grate in some of your favourite chocolate shavings at the end (Pana Chocolate and Loving Earth are my picks) but it’s a sometimes food for me, so I left it out.

If you eat it straight away, it’s fluffy like mousse. Pop it in the fridge or freezer for a short period to chill it. Leave it in the freezer longer and it becomes healthy ice cream. My 6 bananas and punnet of blueberries made enough to fill 7 of the Lock and Lock small round glass containers. They have a leakproof lid and can go in the freezer. Just leave room at the top for the sludge to expand and when you remove them from the freezer, wait a few minutes before you start unclicking the lid or the clips can snap off. I used the LLG811 which are 140ml in size. You could also use the Sinchies reusable food pouches for your sludge too which come in 80ml, 140ml, 200ml & 1 litre in size.

If you’re impatient and you want ice-cream straight away, the Vitamix blender is capable of blending frozen bananas. Be careful in any lesser blender, you’ll break it.
