Baked Quinoa Porridge ~ 3 ways

Healthy food can be zany & innovative, and today’s recipe is no exception. I never would have thought to actually ‘bake’ porridge, but here is Pru’s latest invention, just in time for Mother’s Day, but easily enjoyed all year round. We have provided 3 variations on a theme, using berries, banana & peanut butter and apple cinnamon. Enjoy.

Serves: 3 to 4
Ingredients
Baked Quinoa and Berry Porridge
  • 1 cup organic quinoa flakes we sell Ceres Organics
  • ½ cup organic coconut (shredded)
  • 2 tbsp flax meal
  • 2 tsp [url:4]cinnamon
  • [/url]Pinch of Himalayan Crystal Salt
  • 1 egg
  • 1 cup nut milk (or milk of choice)
  • ½ cup filtered water
  • 2tbsp raw organic honey
  • 1 tsp vanilla bean powder
  • 1 cup organic blueberries or Strawberries – fresh or frozen (do not thaw)
Baked Quinoa and Peanut Butter Porridge
  • As per the top ingredients list, just swapping berries for 1 banana sliced and 2 tbsp peanut butter.
  • Optional – 2 tbsp cacao nibs
Baked Quinoa and Apple Cinnamon Porridge
  • As per the top ingredients list, just swapping berries for one large grated apple plus 1 extra tsp cinnamon
Extras (optional)
  • Coconut Cream / Cashew Cream / Dairy Cream to serve on side
  • Fresh fruit / berries of your choice to serve on side
  • Maple syrup or honey to drizzle
Instructions
  1. Preheat oven to 160C
  2. Place all dry ingredients into mixing bowl and mix well
  3. Add liquid ingredients and stir very well
  4. Fold in berries / Banana & Peanut Butter / Apple & Cinnamon
  5. Place mixture in silicone loaf pan or line a traditional pan with If You Care Baking Paper for easy removal
  6. Place in oven and bake until firm and golden – about 30 mins
  7. Let cool for 5 mins and serve with coconut cream/cream/cashew cream, maple syrup/raw organic honey or eat as is.
  8. Pop what isn’t eaten in container (Lock and Lock or Glasslock are perfect) and place in fridge. Consume left-overs within 2 days.
