Apple Zucchini Hash ~ served sweet or savoury

While making savoury hash cakes with potato as a base is a common thing to cook in our household, this week I have asked Pru for ‘hash with a twist’. Based on apple & zucchini, they’re just as comfortable with a sweet or a savoury side to suit your fancy. Enjoy.

Apple Zucchini Hash ~ served sweet or savoury

Serves: 2
  • 1 large granny smith apple (or other variety to taste)
  • 1 medium zucchini
  • 1 tbsp coconut flour[1] or almond meal
  • 1 tbsp chia seeds[2]
  • Pinch Himalayan Crystal Salt
  • 2 tsp cinnamon[3]
  • Coconut Oil[4] for cooking (or ghee if you’re not dairy free)
Sweet Topping
  • Cream (your choice of coconut cream, cashew cream or dairy)
  • Maple syrup[5] or honey
  • Assorted berries
Savoury Topping
  • Bacon (free range & nitrate free if you can find it)
  • Maple Syrup
  1. Grate apple & zucchini
  2. Add coconut flour, chia seeds, salt & cinnamon to the grated mix
  3. Mix well and allow to stand for 10 minutes to allow the chia seeds to absorb some of the moisture
  4. Melt coconut oil / ghee in a non-stick fry pan on medium heat
  5. Place approx 2 tablespoons of mixture in to the pan and gently flatten to form a patty (makes approx 6 patties)
  6. Cook on each side until golden (approx 30-60 seconds each side), taking care when turning the patty
Sweet Topping
  1. Serve toppings on top of hash stack or to the side of the plate as desired
Savoury Topping
  1. Fry bacon until crispy & serve on top or on the side with a small bowl of maple syrup
